Alcohol in its human metabolic process yields several, highly reactive, oxidizing compounds, acetaldehyde and cytochrom systems are good examples. The reaction of these compounds with macromolecules like proteins and lipids are actively present in different biochemical disorders. Alcohol induced hepatopathology is directly related to lipid and excessive alcohol consumption. Saturated and unsaturated fat play an important
role in understanding the metabolic pathways of alcohol and the different types of liver damage it causes. This study is focused on a comparison of diets, used on rats, containing saturated fat (beef tallow: medium chain triglycerides) over a model with
unsaturated fat (polyunsaturated oil and high carbohydrate contents). Unbalanced Colombian normal eating and drinking habits call for a prompt recognition and acceptance of the greatly negative effects fat and excessive alcohol consumption can bring.
